Up-and-coming chefs should be receiving full support from hospitality employers, chief executive of the British Hospitality Association Bob Cotton has said.
Speaking at the annual Professional Association of Catering Excellence conference, Mr Cotton claimed that it is "essential" for close links to be formed between educators and the industry, CatererSearch reports.
Steve Munkley, the executive chef at the Royal Garden hotel, London, added that not all employers are keen to help the next generation of hospitality employees.
"Some chefs are derogatory about colleges because they haven't gone in and talked to lecturers," he remarked.
Mr Munkley suggested that such links between employers and colleges will ensure the success of the industry, stating: "If you're not turning out students we won't have a workforce."
